- Thread the watermelon cubes and halloumi cheese cubes alternately onto the skewers.
- In a small bowl, whisk together the olive oil, lemon juice, chopped mint, and black pepper.
- Brush the skewers with the olive oil mixture.
- Preheat your grill to medium-high heat.
- Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened.
- Remove from grill, let cool slightly, and serve.
Notes
For best results, chill the skewers for at least 15 minutes before grilling to help them hold their shape.
