Ingredients
  

For the Skewers
  • 1/2 medium watermelon seedless, cut into 1-inch cubes
  • 8 oz halloumi cheese cut into 1-inch cubes
  • 1/4 cup fresh mint leaves chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper freshly ground

Method
 

  1. Thread the watermelon cubes and halloumi cheese cubes alternately onto the skewers.
  2. In a small bowl, whisk together the olive oil, lemon juice, chopped mint, and black pepper.
  3. Brush the skewers with the olive oil mixture.
  4. Preheat your grill to medium-high heat.
  5. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened.
  6. Remove from grill, let cool slightly, and serve.

Notes

For best results, chill the skewers for at least 15 minutes before grilling to help them hold their shape.
