Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 medium peaches ripe but firm, halved and pitted
  • 5 oz mixed greens or your favorite salad greens
  • 1/4 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Equipment

  • Grill
  • Small bowl
  • Whisk
  • Large bowl

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Grill peaches cut-side down for 3-5 minutes, until grill marks appear and peaches are slightly softened.
  3. Remove peaches from grill and let cool slightly. Slice each half into wedges.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper until well combined.
  5. In a large bowl, combine mixed greens, grilled peach wedges, toasted pecans, and crumbled feta cheese.
  6. Drizzle the honey dressing over the salad and toss gently to coat.
  7. Serve immediately.

Notes

You can add grilled chicken or shrimp for a more substantial meal.
