Method
- Preheat your grill to medium-high heat.
- Lightly brush the cut sides of the peaches with a little olive oil. Grill peaches cut-side down for 3-5 minutes, until grill marks appear and peaches are slightly softened.
- Remove peaches from grill and let cool slightly. Slice each half into wedges.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper until well combined.
- In a large bowl, combine mixed greens, grilled peach wedges, toasted pecans, and crumbled feta cheese.
- Drizzle the honey dressing over the salad and toss gently to coat.
- Serve immediately.
Notes
You can add grilled chicken or shrimp for a more substantial meal.
