Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Salad
  • 6 cups romaine lettuce chopped
  • 2 hard-boiled eggs chopped
  • 4 strips bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1/2 cup avocado diced
  • 1/4 cup blue cheese crumbled
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
  4. While chicken is grilling, prepare the dressing. Whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and pepper in a small bowl.
  5. In a large bowl, combine chopped romaine lettuce, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, diced avocado, and crumbled blue cheese.
  6. Add the sliced grilled chicken to the salad.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Chill for 10 minutes before serving.

Serve immediately for the best flavor and texture.
