Greek Yogurt Marinated Chicken Thighs

Ingredients
  

For the Marinade
  • 3/4 cup plain Greek yogurt
  • 1/4 cup olive oil
  • 3 Tablespoon apple cider vinegar
  • 1 lemon juiced
  • 2 small shallots
  • 10 cloves garlic Use 10-12
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon dried oregano
  • 1 Tablespoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
For the Chicken
  • 2 1/2 pounds boneless skinless chicken thighs

Equipment

  • Food processor
  • Baking sheet
  • Zip top bag

Method
 

  1. Add all of the marinade ingredients into the bowl of a large food processor.
  2. Pulse the ingredients until the mixture is smooth.
  3. Place the chicken thighs into a zip top bag. Pour the marinade over the chicken.
  4. Tightly seal the bag and massage the chicken so it is fully coated in the marinade. Marinate for a minimum of 2 hours, up to 12 hours.
  5. Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper.
  6. Place the chicken thighs in a single layer on the prepared baking sheet so they do not overlap. Shake off any excess marinade before placing them on the sheet.
  7. Bake for 25 to 30 minutes. Broil on high for 2 to 3 minutes, or until the edges are slightly blackened.
