- Pat the steak cubes dry with a paper towel and season them with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes in a single layer and cook for 2-3 minutes per side, until browned. Remove the steak from the skillet and set it aside.
- Reduce the heat to medium. Add the sliced zucchini to the same skillet and cook for 4-5 minutes, stirring occasionally, until tender-crisp.
- Add the butter to the skillet. Once it melts, add the minced garlic and cook for about 30 seconds until fragrant.
- Return the seared steak to the skillet. Toss everything together to coat the steak and zucchini in the garlic butter sauce. Cook for another minute to heat through.
- Remove from heat, garnish with fresh parsley, and serve immediately.

Notes
You can add red pepper flakes with the garlic for a bit of heat. This dish also pairs well with rice or quinoa.
