Garlic Butter Steak and Zucchini

Ingredients
  

For the Steak and Zucchini
  • 1 lb sirloin steak cut into 1-inch cubes
  • 2 medium zucchini sliced into half-moons
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Pat the steak cubes dry with a paper towel and season them with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes in a single layer and cook for 2-3 minutes per side, until browned. Remove the steak from the skillet and set it aside.
  3. Reduce the heat to medium. Add the sliced zucchini to the same skillet and cook for 4-5 minutes, stirring occasionally, until tender-crisp.
  4. Add the butter to the skillet. Once it melts, add the minced garlic and cook for about 30 seconds until fragrant.
  5. Return the seared steak to the skillet. Toss everything together to coat the steak and zucchini in the garlic butter sauce. Cook for another minute to heat through.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

You can add red pepper flakes with the garlic for a bit of heat. This dish also pairs well with rice or quinoa.
