  • 4 slices sandwich bread Sourdough with soft crust is recommended
  • 1 cup freshly shredded cheese Gruyere, Colby Jack, and smoked Cheddar
Garlic Butter Mixture
  • 4 tablespoon softened unsalted butter
  • 1 tablespoon mayonnaise
  • 3 cloves garlic very finely minced
  • 1 tablespoon finely chopped Italian parsley
  • to taste Salt and pepper

Method
 

  1. In a bowl, mix the softened butter, mayonnaise, garlic, and parsley until they combine evenly. Season with salt and pepper to your taste.
  2. Spread the garlic butter mixture on one side of each bread slice. Top one slice with the shredded cheese and cover it with the second slice, ensuring the buttered side faces up.
  3. Heat a nonstick skillet over medium-low heat. Cooking at medium-low heat helps the cheese melt completely before the crust browns too much.
  4. Once the skillet is warm, cook the sandwich on both sides for about 5 minutes per side until the crust is golden brown and the cheese is melted. You may need to flip the sandwich a few times to melt the cheese fully in the center. Gently press the sandwich down as you flip it.
  5. Slice the sandwich and serve it immediately while it is warm and the cheese is melted.

Notes

Grate the cheese fresh for the best melting results. You can use pre-packaged slices if you select types that melt well, like American or Colby Jack cheese.
Cook over medium-low heat. If the heat is too high, the outside will burn before the cheese melts.
