For the Shrimp
  • 1 pound raw shrimp peeled and deveined
  • 3 tablespoons olive oil
  • 1 lemon juiced and zested
  • 4 cloves garlic minced
  • ½ teaspoon crushed red pepper flakes
  • 1 pinch kosher salt
  • 1 pinch black pepper
For the Orzo
  • 1 cup orzo
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 2 ¼ cups chicken stock
  • 3 tablespoons fresh parsley chopped
  • 1-2 tablespoons melted butter optional, for serving
  • 1 lemon wedges for serving

Method
 

  1. In a large bowl, combine the shrimp with olive oil, lemon juice, zest, minced garlic, red pepper flakes, salt, and pepper. Stir and let sit for 10 minutes.
  2. Heat the butter in a large skillet over medium heat. Once melted, stir in the orzo. Cook, stirring often, until the orzo is slightly golden and toasty. Stir in the minced garlic and cook for 30 seconds.
  3. Pour in the chicken stock and bring to a boil. Reduce to a simmer, cover the pot, and cook until the orzo absorbs the water and is fluffed, about 12 to 15 minutes.
  4. Add the shrimp to the orzo. Stir, cover the pot again, and cook for another 5 to 8 minutes, or until the shrimp is pink, opaque, and cooked through.
  5. Sprinkle with fresh parsley and a spritz of lemon. Stir in optional melted butter for extra flavor. Serve immediately.
