Fresh Peach Salsa with Cinnamon Chips

Ingredients
  

For the Cinnamon Chips
  • 6 ounces Flour tortillas cut into wedges
  • 2 tablespoons Melted butter
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Ground cinnamon
For the Peach Salsa
  • 2 Ripe peaches peeled, pitted, and diced
  • 1/4 cup Red onion finely chopped
  • 1 tablespoon Fresh cilantro chopped
  • 1 tablespoon Lime juice
  • 1/4 teaspoon Salt

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the melted butter, sugar, and cinnamon.
  3. Brush the tortilla wedges with the cinnamon-butter mixture. Arrange them in a single layer on the prepared baking sheet.
  4. Bake for 8-10 minutes, or until golden brown and crisp. Let them cool on the baking sheet.
  5. While the chips are baking, prepare the salsa. In a medium bowl, combine the diced peaches, red onion, cilantro, lime juice, and salt.
  6. Gently stir to combine all ingredients.
  7. Serve the fresh peach salsa with the cinnamon chips.

Notes

You can adjust the amount of red onion and cilantro to your preference. For a spicier salsa, add a pinch of cayenne pepper.
