Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bruschetta Topping
  • 2 cups diced tomatoes about 2-3 medium tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic minced
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry with paper towels. Place them on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, then season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  4. While the chicken bakes, prepare the bruschetta topping. In a small bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic glaze, 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir gently to combine.
  5. Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping evenly over each chicken breast.
  6. Serve immediately.
