Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the chicken breasts dry with paper towels. Place them on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, then season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- While the chicken bakes, prepare the bruschetta topping. In a small bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic glaze, 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir gently to combine.
- Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping evenly over each chicken breast.
- Serve immediately.
