Freezer Sausage Breakfast Burritos

Ingredients
  

For the Burritos
  • 1 lb Pork sausage casings removed
  • 8 Large eggs
  • 1/4 cup Milk
  • 1 cup Shredded cheddar cheese
  • 8 Large flour tortillas 10-inch

Equipment

  • Large skillet
  • Baking sheet
  • Large bowl

Method
 

  1. Cook the sausage in a large skillet over medium-high heat until browned. Drain excess grease.
  2. While the sausage cooks, whisk together the eggs and milk in a large bowl.
  3. Pour the egg mixture into the skillet with the sausage. Cook, stirring, until the eggs are set.
  4. Stir in the shredded cheese until melted.
  5. Warm the tortillas slightly to make them pliable.
  6. Spoon the sausage and egg mixture evenly onto the center of each tortilla.
  7. Fold in the sides of the tortillas, then roll them up tightly to form burritos.
  8. Wrap each burrito individually in plastic wrap, then in aluminum foil. Store in the freezer.
  9. To reheat, remove foil and plastic wrap. Wrap in a damp paper towel and microwave on high for 2-3 minutes, or until heated through. You can also reheat in a 350F oven for 20-30 minutes.

Notes

You can add other ingredients like diced potatoes, onions, or peppers to the filling. Ensure burritos are completely cooled before wrapping and freezing for best results.
