Ingredients

For the Churro Pastry
  • 150 ml Water (1/2 cup + 2 tbsp)
  • 1/4 tsp Salt
  • 1 tbsp White Sugar
  • 1 tbsp Canola Oil
  • 60 grams All Purpose Flour (1/2 cup)
For the Cinnamon Sugar
  • 100 grams White Sugar (1/2 cup)
  • 1 tsp Ground Cinnamon

Equipment

  • small saucepan
  • Piping bag
  • Star piping tip (nozzle)
  • Baking tray
  • Air Fryer

Method

  1. Gather all your ingredients and equipment before you start. The dough mixes fast.
  2. Add the water, salt, 1 tbsp sugar, and 1 tbsp oil to a small saucepan. Bring this mixture to a boil over high heat, stirring until the sugar and salt dissolve.
  3. Remove the saucepan from the heat. Stir in the 60 grams of All Purpose Flour. Keep stirring until the flour is completely mixed in and forms a smooth ball of dough.
  4. Allow the dough to cool for 10 minutes.
  5. Fit a thick piping bag with a closed star piping tip, such as a 2D tip. Place the churro dough into the piping bag and twist the end to secure it.
  6. Line a baking tray with parchment paper. Pipe 2 inch churro bites onto the paper. Use scissors to trim the dough pieces.
  7. Set your air fryer to 360F and preheat it for 2 minutes.
  8. Add half of the churro bites to the air fryer tray. Spray them lightly with cooking oil. Make sure there is space between the bites for air circulation.
  9. Fry for 10 minutes, turning the bites over at the 5 minute mark. Shuffle them around during the second half of cooking to help them cook evenly.
  10. While the first batch cooks, make the cinnamon sugar. In a bowl, mix together the 100 grams of white sugar and 1 tsp of ground cinnamon.
  11. When the first batch is done, immediately toss the hot bites in the cinnamon sugar mixture and set them aside. Do not add extra oil to this batch.
  12. Add the remaining bites to the air fryer and repeat the frying process.
  13. Serve the churro bites warm.

Notes

This recipe uses standard flour. If you need a gluten-free version, substitute the All Purpose Flour with a 1-to-1 gluten-free baking blend.
