- Heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground pork and cook until browned, using a spatula to break it apart.
- Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for 2-3 minutes until the onion softens.
- In a small bowl, whisk together the soy sauce, rice vinegar, and sriracha to make the sauce.
- Add the coleslaw mix to the skillet and pour the sauce over it. Stir to combine. Cook for 5-7 minutes, or until the cabbage has wilted to your liking.
- Remove the skillet from the heat. Stir in the sliced green onions and serve immediately.
