  • 1 teaspoon grated peeled fresh ginger
  • 1 teaspoon finely chopped garlic
  • 1/2 cup chopped tomatoes
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon kashmiri chile powder or other red chile powder
  • to taste Kosher salt
  • 4 large eggs, lightly beaten
  • 1 teaspoon fresh lemon juice
For Serving
  • 2 tablespoons chopped fresh cilantro for serving

Method
 

  1. Heat the ghee in a medium skillet over medium heat.
  2. Add the onion, chile, ginger, and garlic. Cook, stirring often, until the onions are translucent, about 4 minutes.
  3. Add the tomatoes and spices. Cook, stirring often, until the spices are toasted and the tomatoes soften, 2 to 3 minutes.
  4. Add the eggs. Stir until the eggs are softly scrambled, about 2 minutes.
  5. Stir in the lemon juice and serve right away, garnished with the chopped cilantro.

Notes
