Easy Overnight Breakfast Casserole (Crowd Favorite)

Ingredients
  

For the Casserole
  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream light or regular
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions chopped
  • 1/2 green bell pepper diced
  • 1/2 red bell pepper diced
  • 2 cups shredded cheddar cheese

Equipment

  • 9x13 inch baking pan
  • Large bowl
  • Electric mixer
  • Large skillet
  • Wooden spoon

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking pan with cooking spray.
  2. In a large bowl, combine the eggs, sour cream, milk, cheese, salt, and pepper. Mix on low speed with electric mixers until just combined.
  3. Heat a large skillet over medium heat. Add the sausage and cook until browned, breaking it into small pieces with a wooden spoon. Drain most of the grease and add the cooked sausage to the egg mixture.
  4. Add the diced bell peppers and chopped green onions to the same skillet used for the sausage. Sauté for 2-3 minutes until slightly softened. Add the sautéed vegetables to the bowl with the egg and sausage mixture and stir everything to combine.
  5. Pour the combined mixture into the prepared baking pan. Bake for 35-50 minutes, or until the edges are set and the center is just barely jiggly.
  6. Leftover breakfast casserole can be stored in the refrigerator and enjoyed within 3-4 days. Reheat leftovers in the microwave.
