- Preheat your oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray. Pour about 1 teaspoon vegetable oil into the pan to coat the bottom.
- Mix the Parmesan cheese, salt, garlic powder, paprika, and pepper together in a bowl.
- Blot the cut-side of the potatoes dry with a paper towel to remove moisture.
- Place the potatoes in a bowl and drizzle with 1 tablespoon vegetable oil. Toss until the potatoes are lightly coated. Sprinkle the potatoes with the Parmesan mixture and toss again to coat them evenly.
- Arrange the potatoes cut-side down on the prepared baking pan.
- Bake in the preheated oven for 15 to 20 minutes. Flip the potatoes and continue baking until they are golden and crispy, about 15 to 20 more minutes.
- Serve hot, with sour cream if desired.

Notes
Try to get as much of the Parmesan mixture onto the cut side of the potatoes as you can. When you place the potatoes into the baking pan, press the cut sides directly into any remaining Parmesan mixture that sticks to the bowl to distribute it evenly.
