Ingredients
  

For the Skillet
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can kidney beans 15 ounce, rinsed and drained
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese

Method
 

  1. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the undrained diced tomatoes, rinsed kidney beans, taco seasoning, and water to the skillet. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, stirring occasionally.
  6. Uncover and sprinkle the shredded cheddar cheese over the top. Cover again and let it melt, about 2-3 minutes.
  7. Serve hot with your favorite toppings.

Notes

This taco skillet is versatile. You can substitute ground turkey or chicken for the beef. Add corn or black beans for extra texture and flavor.
