Easy Beef Taco Casserole

Ingredients
  

Casserole Base
  • 1 pound extra lean ground beef 90% lean
  • 10.75 ounces Condensed Tomato Soup Campbell’s
  • 1 cup Picante Sauce Pace
  • 1/2 cup water
  • 2 teaspoons chili powder
  • 8 corn tortillas (6-inch) or 6 flour tortillas (8-inch) cut into 1-inch pieces
Topping
  • 1 cup shredded Cheddar cheese or Monterey Jack cheese about 4 ounces, divided

Method
 

  1. Preheat your oven to 375 degrees F. Lightly grease a 9x13 inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Stir the tomato soup, picante sauce, water, and chili powder into the cooked beef. Bring the mixture to a simmer.
  4. In the prepared baking dish, layer half of the tortilla pieces on the bottom. Pour half of the beef mixture over the tortillas. Sprinkle with half of the cheese.
  5. Repeat the layering process: remaining tortillas, remaining beef mixture, and the rest of the cheese on top.
  6. Bake for 25 minutes, or until the casserole is hot and the cheese is melted and bubbly. Let it stand for a few minutes before serving.

Notes
