- In a large pot over medium-high heat, cook the onion and jalapeño in the butter until softened. Add the ground beef and cook, breaking it up with a spoon, until lightly browned. Season with salt and pepper.
- Add the garlic, chili seasoning, and cumin. Continue to cook for 2 minutes, stirring.
- Add the remaining ingredients except for the cilantro. Bring to a boil, then reduce heat and simmer, partially covered, for 45 minutes, or until the chili has thickened. Stir occasionally during cooking. Adjust seasoning as needed. Stir in cilantro, if desired.
Notes
To reduce the heat of the jalapeño, remove the seeds and white membranes before chopping.
