Easy Beef Chili

This easy beef chili is a hearty and flavorful meal perfect for busy families. It comes together quickly and is sure to be a hit with everyone.

Ingredients
  

For the Chili
  • 1 onion finely chopped
  • 1 jalapeño pepper seeded or not, finely chopped
  • 2 tbsp butter
  • 2.2 lb ground beef
  • 2 cloves garlic finely chopped
  • 2 tbsp chili seasoning
  • 1 tsp ground cumin
  • 1 can (28 oz) diced tomatoes
  • 1 can (19 oz) red kidney beans rinsed and drained
  • 1 cup strong brewed coffee
  • 1/4 cup beef broth or water
  • 1/4 cup ketchup
  • 3 tbsp lime juice
Optional Garnish
  • 1/4 cup chopped cilantro optional

  • Wooden spoon

Method
 

  1. In a large pot over medium-high heat, cook the onion and jalapeño in the butter until softened. Add the ground beef and cook, breaking it up with a spoon, until lightly browned. Season with salt and pepper.
  2. Add the garlic, chili seasoning, and cumin. Continue to cook for 2 minutes, stirring.
  3. Add the remaining ingredients except for the cilantro. Bring to a boil, then reduce heat and simmer, partially covered, for 45 minutes, or until the chili has thickened. Stir occasionally during cooking. Adjust seasoning as needed. Stir in cilantro, if desired.

Notes

To reduce the heat of the jalapeño, remove the seeds and white membranes before chopping.
