  • 2 slices whole grain bread, or English muffin or bagel
  • 1/2 avocado, sliced
  • 1/4-1/2 lemon, juiced
  • 2/3 cup cottage cheese
  • to taste hot honey drizzle
  • to taste red pepper flakes if desired
  • to taste salt + black pepper

  • 1 everything bagel seasoning optional
  • as needed finely chopped herbs optional
  • 1 chili crunch optional
  • 1 sliced tomato optional
  • 1 fried egg optional

Method
 

  1. Toast the bread until it is golden brown using a toaster or toaster oven.
  2. On each slice of toast, add the sliced avocado, a squeeze of lemon juice, ⅓ cup cottage cheese, salt and pepper to your preference, a drizzle of hot honey, and red pepper flakes if you want them.
