Ingredients
  

Pancakes
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 tsp salt

Method
 

  1. In a mixing bowl, whisk together the flour and salt.
  2. Add the eggs and milk to the dry ingredients. Whisk until the batter is just combined. Do not overmix; a few small lumps are fine.
  3. Heat a griddle or large skillet over medium heat. Lightly grease the surface if needed.
  4. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  5. Cook for 2 to 3 minutes per side, or until bubbles form on the surface and the edges look set. Flip and cook the other side until golden brown.
  6. Serve the pancakes warm with your preferred toppings.

Notes

This recipe is simple and works well for a small batch. If you need more pancakes, you can easily double the ingredients. The simple nature of this recipe means you can make breakfast fast when you have little time.
