Ingredients
  

Salad
  • 1 large cucumber peeled, seeded, and chopped
  • 2 cups cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 4 ounces feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • Salt to taste salt
  • Black pepper to taste black pepper

Method
 

  1. In a large bowl, combine the chopped cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and chopped mint leaves.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and black pepper to taste.
  3. Pour the dressing over the salad ingredients. Toss gently to combine.
  4. Cover the bowl and chill in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.

Notes

This salad can be made ahead of time and stored in the refrigerator. For best results, add the dressing just before serving if you prefer crispier vegetables.
