Method
- Heat the olive oil over medium heat in a small frying pan.
- Scatter the crumbled feta in a circle around the edge of the pan, leaving the center empty enough for the egg yolk.
- Sprinkle the red pepper flakes over the feta.
- Cook for a couple of minutes until you hear the feta sizzling and see it starting to melt.
- Place the egg over the feta, making sure the yolk is in the center of the pan.
- Season with salt and pepper to your taste.
- Cook the egg until it reaches your preferred doneness. You can add a lid to the pan after a minute or two to help cook the yolk. You can flip the egg and feta, but this may be messy.
- Place the eggs and feta over toast or serve them plain.
