Ingredients
  

  • 1 tbsp olive oil
  • 1/3 cup crumbled feta Adjust amount to your preference.
  • 1/8 tsp red pepper flakes
  • 1 large egg
  • to taste salt and pepper
  • 1 piece toast, your choice

Method
 

  1. Heat the olive oil over medium heat in a small frying pan.
  2. Scatter the crumbled feta in a circle around the edge of the pan, leaving the center empty enough for the egg yolk.
  3. Sprinkle the red pepper flakes over the feta.
  4. Cook for a couple of minutes until you hear the feta sizzling and see it starting to melt.
  5. Place the egg over the feta, making sure the yolk is in the center of the pan.
  6. Season with salt and pepper to your taste.
  7. Cook the egg until it reaches your preferred doneness. You can add a lid to the pan after a minute or two to help cook the yolk. You can flip the egg and feta, but this may be messy.
  8. Place the eggs and feta over toast or serve them plain.
