Creamy Tortellini Soup

A simple and creamy tortellini soup that is perfect for busy weeknights. This slow cooker recipe makes dinner easy.

Ingredients
  

For the Soup
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 can diced tomatoes undrained, 14.5 ounces
  • 1 can chicken broth 14.5 ounces
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 package refrigerated cheese tortellini 19 ounces
  • 1/2 cup shredded Parmesan cheese
Optional Garnishes
  • fresh parsley chopped

Method
 

  1. Place chicken, diced tomatoes, chicken broth, heavy cream, Italian seasoning, garlic powder, and black pepper in your slow cooker. Stir to combine.
  2. Cover and cook on low for 4 hours or on high for 2 hours, until the chicken is cooked through.
  3. Shred the chicken with two forks directly in the slow cooker. Stir in the tortellini and cook for an additional 10-15 minutes, or until the tortellini is tender.
  4. Stir in the Parmesan cheese until melted. Serve hot, garnished with fresh parsley if desired.

Notes

You can substitute cooked shredded chicken for the raw chicken breasts. Add it in the last 30 minutes of cooking time.
