  • 4 cups shredded chicken cooked
  • 2 cups spaghetti squash cooked
  • 1 cup mozzarella cheese
  • 1/4 cup bacon crumbles
Sauce
  • 4 oz cream cheese softened
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
Topping
  • 1 cup mozzarella cheese
  • 1/2 cup bacon crumbles
  • 1 tbsp chopped chives

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix together the sauce ingredients: cream cheese, mayo, sour cream, garlic powder, onion powder, salt, and pepper. Stir in the shredded chicken, cooked spaghetti squash, 1 cup of mozzarella cheese, and 1/4 cup of bacon crumbles. Spread this mixture in a greased 9 x 13 baking dish.
  3. Top the casserole with the remaining 1 cup of mozzarella cheese, 1/2 cup of bacon crumbles, and the chopped chives.
  4. Bake for 30 minutes, or until the casserole is hot and bubbly throughout.

Notes

You can substitute shredded turkey for the shredded chicken. You can also swap the spaghetti squash for any cooked low-carb vegetable like broccoli, cauliflower, spinach, or zucchini.
