- Preheat the oven to 350 degrees Fahrenheit.
- Mix together the sauce ingredients: cream cheese, mayo, sour cream, garlic powder, onion powder, salt, and pepper. Stir in the shredded chicken, cooked spaghetti squash, 1 cup of mozzarella cheese, and 1/4 cup of bacon crumbles. Spread this mixture in a greased 9 x 13 baking dish.
- Top the casserole with the remaining 1 cup of mozzarella cheese, 1/2 cup of bacon crumbles, and the chopped chives.
- Bake for 30 minutes, or until the casserole is hot and bubbly throughout.

Notes
You can substitute shredded turkey for the shredded chicken. You can also swap the spaghetti squash for any cooked low-carb vegetable like broccoli, cauliflower, spinach, or zucchini. Cooking the chicken and spaghetti squash ahead of time will save preparation time. To reheat, warm the casserole in the microwave for 1-2 minutes covered with a paper towel, or heat in the oven at 350 degrees for 10-15 minutes until hot.
