For the Casserole
  • 2 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tbsp olive oil
  • 8 oz cream cheese softened
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook until browned on all sides. Season with salt and pepper.
  3. In a mixing bowl, combine the softened cream cheese, heavy cream, Parmesan cheese, garlic powder, and onion powder. Mix until smooth.
  4. Add the cooked chicken to the cream cheese mixture and stir to combine.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the shredded mozzarella cheese over the top.
  7. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is golden brown.
  8. Let it cool for a few minutes before serving. Garnish with fresh parsley.
