Ingredients
  

For the Cranberry Brie Bites
  • 1 round cold brie cheese 8-ounce
  • 1/3 cup whole berry cranberry sauce such as Spiced Cranberry Sauce
  • 2 tablespoons packed brown sugar light or dark
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest finely grated, from 1/2 medium orange
  • 1/8 teaspoon ground nutmeg
  • 2 tablespoons nuts coarsely chopped, such as pistachios, almonds, walnuts, or pecans
  • 2 sprigs fresh rosemary divided, optional
For Serving
  • Assorted crackers, or crostini store-bought or homemade

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine the cranberry sauce, brown sugar, vanilla extract, orange zest, and nutmeg. Stir until well mixed.
  3. Place the cold brie cheese round in a small baking dish or pie plate if you plan to serve it directly from the dish. If you intend to transfer the cheese to a serving platter after baking, line a baking sheet with parchment paper and place the brie on it.
  4. Spoon the cranberry mixture evenly over the top of the brie. Sprinkle the chopped nuts over the cranberry mixture. If using rosemary, place one sprig on top.
  5. Bake for 8 to 15 minutes, or until the cheese is soft when gently poked. Avoid overbaking until it is completely melted or collapsing.
  6. If you baked the brie on parchment paper, carefully lift the paper and slide the cheese onto your serving dish using a spatula. Discard the used rosemary sprig and garnish with a fresh rosemary sprig, if desired.
  7. Serve immediately with your choice of crackers or crostini.
