Cozy Slow Cooker Chicken and Dumplings

Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
For the Soup
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 0.5 cup chopped onion
  • 4 cups chicken broth
  • 1 can cream of chicken soup 10.5 ounce
  • 0.25 cup butter
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk

Method
 

  1. Place chicken breasts in the slow cooker. Season with salt and pepper.
  2. Add carrots, celery, onion, chicken broth, cream of chicken soup, and butter to the slow cooker.
  3. Cover and cook on low for 4 hours, or until chicken is cooked through.
  4. Remove chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker.
  5. In a separate bowl, whisk together flour, baking powder, and salt for the dumplings.
  6. Stir in milk until just combined. Do not overmix.
  7. Drop spoonfuls of the dumpling batter onto the simmering soup in the slow cooker.
  8. Cover and cook for an additional 20-25 minutes, or until dumplings are cooked through.

Notes

You can add fresh parsley for garnish if desired.
