Method
- Place chicken breasts in the slow cooker. Season with salt and pepper.
- Add carrots, celery, onion, chicken broth, cream of chicken soup, and butter to the slow cooker.
- Cover and cook on low for 4 hours, or until chicken is cooked through.
- Remove chicken from the slow cooker and shred it. Return the shredded chicken to the slow cooker.
- In a separate bowl, whisk together flour, baking powder, and salt for the dumplings.
- Stir in milk until just combined. Do not overmix.
- Drop spoonfuls of the dumpling batter onto the simmering soup in the slow cooker.
- Cover and cook for an additional 20-25 minutes, or until dumplings are cooked through.
Notes
You can add fresh parsley for garnish if desired.
