For the Topping
  • 1/4 cup cottage cheese full fat or low fat
  • 1/2 medium tomato sliced or diced
  • pinch salt to taste
  • pinch black pepper to taste
  • optional fresh herbs like chives or basil, chopped

Method
 

  1. Toast the slice of bread until golden brown and crisp.
  2. Spread the cottage cheese evenly over the toasted bread.
  3. Arrange the tomato slices or diced tomatoes on top of the cottage cheese.
  4. Season with salt and black pepper to your liking.
  5. Garnish with fresh herbs if desired.
  6. Serve immediately.

Notes

You can add a drizzle of olive oil or a sprinkle of red pepper flakes for extra flavor.
