Ingredients
  

For the Soup
  • 1 tablespoon Olive oil
  • 1 pound Italian sausage casings removed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 can Crushed tomatoes 28 ounces
  • 4 cups Beef broth
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 cup Lasagna noodles broken into pieces
For Serving
  • 1/2 cup Ricotta cheese
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons Fresh parsley chopped

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and beef broth. Add oregano, salt, and pepper. Bring the soup to a simmer.
  4. Add the broken lasagna noodles to the simmering soup. Cook according to package directions, or until the noodles are tender, stirring occasionally to prevent sticking.
  5. Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese, grated Parmesan cheese, and chopped fresh parsley.

Notes

You can substitute ground beef or turkey for the Italian sausage if desired. For a vegetarian option, omit the sausage and add extra vegetables like zucchini or bell peppers.
