Cinnamon Roll French Toast Roll-Ups

Ingredients
  

For the Roll-Ups
  • 10 slices White sandwich bread
  • 3 tablespoons Butter, melted
  • 3 tablespoons Brown sugar
  • 2 tablespoons Ground cinnamon
For the French Toast Coating
  • 3 large Eggs
  • 1 tablespoon Milk
  • 1/2 teaspoon Ground cinnamon
  • 1/2 teaspoon Vanilla extract
For Cooking
  • 2-3 tablespoons Butter for frying

Method
 

  1. Remove the crusts from the bread slices. Use a rolling pin to flatten each slice.
  2. In a small bowl, mix the melted butter, brown sugar, and 2 tablespoons of cinnamon.
  3. Spread this mixture evenly on each bread slice, leaving a small border at the edges.
  4. Roll up each slice tightly, sealing the edges with gentle pressure.
  5. In a shallow bowl, whisk together the eggs, milk, 1/2 teaspoon of cinnamon, and vanilla extract.
  6. Heat a skillet over medium heat and add the butter for cooking.
  7. Dip each roll into the egg mixture, then place it seam-side down in the skillet.
  8. Cook for about 3 minutes total, rotating the roll-ups to brown all sides evenly.

Notes

Use fresh, soft bread for the best rolling results. Do not soak the roll-ups too long in the egg mixture. Keep the heat at medium to stop the outside from burning before the inside warms through. You can prepare these ahead of time and reheat them later. They also freeze well for up to 1 month.
