  • 4 tablespoons chipotle adobo sauce
  • 2 tablespoons ketchup
  • 1 tablespoon honey

Method
 

  1. In a medium bowl, whisk together the chipotle adobo sauce, ketchup, honey, and vinegar.
  2. Add the shredded cooked chicken, half of the shredded cheddar cheese, and stir well to combine all ingredients.
  3. Spread one side of each bread slice with mayonnaise. Place the slices mayo-side down on a chopping board. Spread the other side of the same slices with the mashed avocado.
  4. Divide the chicken and cheese mixture evenly onto two of the bread slices. Sprinkle the remaining cheese over the chicken mixture. Top these two slices with the remaining bread slices, ensuring the mayo-side faces up.
  5. Heat a non-stick pan over low heat and drizzle with the olive oil. Add the sandwiches and cook for 3 to 4 minutes per side, until the bread is golden brown and the cheese inside is fully melted.
  6. Serve the sandwiches warm.
