Ingredients

For the Pasta
  • 1/2 onion diced
  • 1 lb lean ground beef
  • 2 tsp garlic powder
  • 3 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1/4 cup dry sherry or beef broth
  • 3 cups low sodium beef broth
  • 1 cup milk
  • 1.5 tsp salt
  • 1/2 tsp black pepper
  • 2 cups dry rotini noodles
  • 2 cups shredded sharp cheddar cheese

Equipment

  • Large skillet

Method

  1. Brown the ground beef and diced onion in a large skillet over medium heat. Drain any excess fat.
  2. Stir in the garlic powder and paprika. Cook for one minute until fragrant.
  3. Sprinkle the flour over the meat mixture and stir well for about one minute to cook out the raw flour taste.
  4. Pour in the sherry (or broth), beef broth, and milk. Stir to combine, scraping up any browned bits from the bottom of the pan.
  5. Add the salt, pepper, and dry rotini noodles. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it melts smoothly into the sauce.
  7. Serve immediately. This dish is simple to make and brings joy to the dinner table.
