- Heat olive oil in a large skillet over medium heat. Add the sausage and cook until it browns, about 5 minutes.
- Add the green and red bell peppers, onion, garlic, Cajun seasoning, oregano, and smoked paprika. Cook, stirring often, until the vegetables soften, about 5 minutes.
- Stir in the diced tomatoes and chicken broth until they are evenly combined. Stir in the rice and bring the mixture to a boil over medium-high heat.
- When the rice mixture boils, reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the liquid absorbs into the rice.
- Stir the skillet contents well and transfer the rice to a serving bowl. Sprinkle with the sliced scallions before serving.
