Berry French Toast Bake

Ingredients
  

For the French Toast Bake
  • 8 slices bread stale or day-old, cut into 1-inch cubes
  • 2 cups milk whole or 2%
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1.5 cups mixed berries fresh or frozen
Optional Toppings
  • powdered sugar for dusting
  • maple syrup

  • 9x13-inch baking dish
  • Large bowl
  • Whisk

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared baking dish.
  3. In a large bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes in the baking dish.
  5. Scatter the mixed berries over the top of the bread mixture.
  6. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or preferably overnight, to allow the bread to soak up the custard.
  7. When ready to bake, remove the plastic wrap and bake for 40-45 minutes, or until the French toast is puffed, golden brown, and cooked through. A knife inserted into the center should come out clean.
  8. Let the bake cool for about 10 minutes before serving. Dust with powdered sugar and serve with maple syrup, if desired.

Notes

You can use any type of bread you like, but slightly stale bread works best as it absorbs the custard better. If using frozen berries, do not thaw them before adding to the bake.
