BBQ Pineapple Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts Chicken breasts
For the BBQ Pineapple Glaze
  • 1 cup Crushed pineapple undrained
  • 1/2 cup BBQ sauce
  • 1/4 cup Brown sugar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Ginger powder

Equipment

  • Basting brush
  • small saucepan

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small saucepan, combine all ingredients for the BBQ pineapple glaze. Bring to a simmer over medium heat, stirring occasionally. Cook for 5-7 minutes, or until slightly thickened. Remove from heat.
  3. Lightly oil the grill grates. Place chicken breasts on the grill.
  4. Grill chicken for about 6-8 minutes per side, or until cooked through. During the last 5 minutes of grilling, brush generously with the BBQ pineapple glaze.
  5. Remove chicken from grill and let it rest for a few minutes before serving. Serve with extra glaze if desired.

Notes

You can also bake this chicken in the oven at 375°F (190°C) for 25-30 minutes, basting with the glaze during the last 10 minutes.
