Ingredients
  

For the Flatbread
  • 1 large store-bought flat bread pizza crust or 2 medium flat breads
  • 1 cup shredded mexican blend cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup cilantro, roughly chopped
For the Chicken
  • 2 chicken breasts pounded to ½ inch thickness
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • to taste salt and pepper
  • 1/2 each barbecue sauces e.g., hickory and sweet chipotle

Equipment

  • Small bowl

Method
 

  1. Preheat your oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  2. Season the chicken breasts on both sides with garlic powder, chili powder, salt, and pepper. Cook in a skillet over medium heat for 5-6 minutes on each side, until cooked through and the juices run clear. Remove from heat and chop the chicken into bite-sized pieces.
  3. In a small bowl, whisk together the barbecue sauces. Spread the sauce evenly over the flatbread crust.
  4. Sprinkle the shredded cheese over the sauce, followed by the thinly sliced red onion.
  5. Top with the chopped chicken and finish by sprinkling the cilantro over the entire flatbread.
  6. Bake for 10-12 minutes, or until the cheese is melted and starts to brown slightly. Slice and serve immediately.

Notes

For a little extra heat, add some sliced jalapeños. Jarred or canned jalapeños work well as they are tender and their heat is slightly mellowed by the brine.
