Ingredients
  

For the Chicken
  • 1.5 lb Boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for serving
For the Bowls
  • 2 cups Cooked rice e.g., white, brown, or cauliflower rice
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn frozen or canned, drained
  • 1/2 cup Red onion chopped
  • 1/4 cup Cilantro chopped
Optional Toppings
  • Avocado, sliced
  • Shredded cheese
  • Sour cream or Greek yogurt

  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until evenly coated.
  3. Spread the coated chicken in a single layer on a baking sheet.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top with the baked BBQ chicken, black beans, corn, red onion, and cilantro.
  6. Add any of your favorite optional toppings, such as avocado, cheese, or sour cream. Drizzle with extra BBQ sauce if desired.
