- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until evenly coated.
- Spread the coated chicken in a single layer on a baking sheet.
- Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
- Assemble the bowls: Divide the cooked rice among four bowls. Top with the baked BBQ chicken, black beans, corn, red onion, and cilantro.
- Add any of your favorite optional toppings, such as avocado, cheese, or sour cream. Drizzle with extra BBQ sauce if desired.
