Ingredients
  

For the Banana Bread
  • 3 very ripe bananas medium/large
  • 8 Tbsp unsalted butter at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1 cup walnuts coarsely chopped
  • 1/2 cup raisins

Method
 

  1. Preheat your oven to 350°F. Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep).
  2. Lightly roast walnuts on a skillet, stirring continuously to prevent burning. Coarsely chop and let them cool to room temperature.
  3. In a mixing bowl, cream together the softened butter and sugar until well combined.
  4. Mash the bananas with a fork until they have a chunky applesauce consistency. Add the mashed bananas and beaten eggs to the butter and sugar mixture, mixing until blended.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Add this dry mixture to the wet ingredients and mix until just combined.
  6. Stir in the vanilla extract, chopped walnuts, and raisins. Pour the batter into the prepared loaf pan.
  7. Bake at 350°F for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread rest in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a gluten-free version, you can substitute a gluten-free all-purpose flour blend for the all-purpose flour. You can also use honey instead of sugar if you prefer.
