Baked Lemon Garlic Salmon

Ingredients
  

For the Marinade
  • 2 tbsp unsalted butter melted
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp garlic freshly minced
  • 1 tsp honey
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • 1 tsp sea salt flakes
  • 0.5 tsp cracked black pepper plus extra to serve
  • 0.5 tsp chilli flakes red pepper, optional
For the Salmon
  • 4 skin-on salmon fillets
To Serve
  • mashed potato freezer-friendly
  • steamed greens or leafy green salad sprinkled with parmesan (optional)
  • fresh lemon slices
  • fresh flat-leaf (Italian) parsley finely chopped

Method
 

  1. Preheat your oven to 220°C (425°F) or 200°C (400°F) fan-forced. Ensure the oven is fully preheated for at least 20 minutes.
  2. Prepare the lemon garlic butter by combining the melted butter, olive oil, lemon juice, minced garlic, honey, paprika, oregano, sea salt flakes, cracked black pepper, and chilli flakes (if using) in a bowl.
  3. Arrange the salmon fillets skin-side down in a roasting tin.
  4. Spoon the prepared marinade evenly over the top of each salmon fillet.
  5. Bake the salmon for 12 minutes. Then, turn your oven's grill (broiler) to high and cook for an additional 3 minutes, or until the salmon is caramelized and cooked to your preference.
  6. Serve the salmon with mashed potatoes, steamed greens or a green leafy salad. Garnish with extra black pepper, lemon slices, and a sprinkle of fresh parsley.

Notes

This recipe is naturally gluten-free. For a fun family activity, involve your children in preparing the marinade by having them squeeze the lemon juice or mix the ingredients.
