  • 8 eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp fine salt
  • 1/4 tsp black pepper
  • 3/4 cup cottage cheese (2% or full-fat)
  • 1/2 cup shredded or shaved Parmesan cheese
  • 3 cups fresh spinach, roughly chopped
  • 1/2 cup yellow onion or green onions, finely diced
  • As needed Nonstick cooking spray

Method
 

  1. Preheat your oven to 375 degrees. Mist a 9x9 inch dish with nonstick cooking spray.
