- Preheat your oven to 400 degrees Fahrenheit.
- Line a baking sheet with parchment paper. Wash your sweet potatoes and poke them 5-6 times with a fork or sharp knife. Place them on the baking sheet and bake for 60 minutes. Adjust bake time if your sweet potatoes are large or small.

Remove the chicken from the pan and shred it with two forks.
- Combine the shredded chicken in a bowl with the BBQ sauce.
- Slice each baked sweet potato in half. Fill with the BBQ chicken mixture and top with sliced red onion and chopped cilantro.
