Avocado Toast 3 Ways

This recipe offers three delicious variations of avocado toast, perfect for a quick and healthy breakfast or brunch. Each version is designed to be visually appealing and satisfying, catering to various tastes and dietary needs.

Ingredients
  

Base
  • ½ small avocado seeded and peeled
  • 2 slices bread of choice gluten-free if needed
  • Salt salt to taste
  • Pepper pepper to taste
Optional Additions
  • 1 tablespoon olive oil or butter for cooking eggs
  • 2 teaspoons white vinegar for poached eggs
Egg Options (Choose one per slice)
  • 2 large eggs for frying, scrambling, boiling, or poaching

Method
 

  1. Toast the bread slices until golden brown and crispy.
  2. Mash the avocado onto the toast. Slice it and spread it evenly.
  3. Prepare your eggs using one of the following methods:
  4. For fried eggs: Heat 1 tablespoon of olive oil or butter in a nonstick skillet over medium-high heat. Crack an egg into the skillet and reduce heat to low. Cook until the whites are set and yolks are to your liking, about 5-7 minutes.
  5. For scrambled eggs: Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium-high heat. Whisk an egg in a small bowl, then pour into the pan. Gently fold the eggs as they set until cooked through, about 2-3 minutes.
  6. For boiled eggs: Place an egg in a saucepan and cover with cool water. Bring to a boil, then reduce heat and cook for 4 minutes (soft), 6 minutes (medium), or 12 minutes (hard). Immediately transfer to an ice bath to cool before peeling.
  7. For poached eggs: Bring a large pot of water to a boil. Stir in 2 teaspoons of white vinegar. Crack an egg into a small bowl. Create a vortex in the boiling water and carefully slide the egg into the center. Cook for 3-4 minutes. Remove with a slotted spoon.
  8. Top each avocado toast with your prepared egg.
  9. Season with salt and pepper to taste.

Notes

This recipe is easily adaptable. Feel free to add toppings like red pepper flakes, everything bagel seasoning, sliced radishes, or cherry tomatoes to further customize your avocado toast.
