Apple Cinnamon Baked Oatmeal

Ingredients
  

For the Oatmeal
  • 2 cups rolled oats
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 large egg beaten
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
For the Apples
  • 2 medium apples peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a large bowl, combine the rolled oats, brown sugar, baking powder, 1 teaspoon of cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, beaten egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, toss the diced apples with lemon juice, granulated sugar, and 1/2 teaspoon of cinnamon.
  6. Fold the cinnamon-coated apples into the oatmeal mixture.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown on top.
  9. Let it cool slightly before serving. Serve warm.

Notes

You can add other fruits like berries or use different spices like nutmeg or cardamom. For a richer flavor, you can add chopped nuts like walnuts or pecans.
