- Preheat your oven to 375°F (190°C). Grease a baking dish.
- In a large bowl, combine the rolled oats, brown sugar, baking powder, 1 teaspoon of cinnamon, and salt.
- In a separate bowl, whisk together the milk, beaten egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, toss the diced apples with lemon juice, granulated sugar, and 1/2 teaspoon of cinnamon.
- Fold the cinnamon-coated apples into the oatmeal mixture.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown on top.
- Let it cool slightly before serving. Serve warm.
Notes
You can add other fruits like berries or use different spices like nutmeg or cardamom. For a richer flavor, you can add chopped nuts like walnuts or pecans.
