Air Fryer Stuffed Peppers

These air fryer stuffed peppers are a simple and satisfying weeknight meal. They are filled with a savory mixture and cooked until tender.

Ingredients
  

For the Peppers
  • 4 Bell peppers any color, tops removed and seeded
For the Filling
  • 1 lb Ground meat beef, turkey, or chicken
  • 1/2 cup Cooked rice
  • 1/4 cup Onion finely chopped
  • 1 clove Garlic minced
  • 1/4 cup Tomato sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Shredded cheese cheddar or mozzarella

  • Air Fryer
  • Knife
  • Cutting board
  • Mixing Bowl

Method
 

  1. Prepare the peppers: Cut off the tops of the bell peppers, remove the seeds and membranes. Rinse them out.
  2. Make the filling: In a mixing bowl, combine the ground meat, cooked rice, chopped onion, minced garlic, tomato sauce, Italian seasoning, salt, and pepper. Mix well.
  3. Stuff the peppers: Spoon the filling mixture evenly into each prepared bell pepper.
  4. Cook in the air fryer: Place the stuffed peppers in the air fryer basket. Cook at 375°F (190°C) for 20 minutes, or until the peppers are tender and the meat is cooked through.
  5. Add cheese: In the last 5 minutes of cooking, sprinkle the shredded cheese over the top of each pepper.
  6. Serve: Carefully remove the stuffed peppers from the air fryer and serve hot.

Notes

You can add other vegetables to the filling, such as corn or diced tomatoes. For a spicier kick, add a pinch of red pepper flakes.
