Ingredients

Chicken
  • 8 chicken thighs bone-in, skin-on
Seasoning
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1.5 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground

Equipment

  • Small bowl
  • Large mixing bowl
  • Baking sheet
  • Wire rack

Method

  1. Preheat your oven to 425°F (220°C). Remove the chicken thighs from the fridge and let them come to room temperature. Pat them dry with a paper towel. In a small bowl, mix all the herbs and spices together.
  2. Place the chicken in a large mixing bowl. Add the oil and ⅔ of the spice blend. Use your hands to coat all sides of the chicken, getting some seasoning under the skin.
  3. Place the chicken on a rack set over a baking sheet. Sprinkle the remaining spice mix on top of the chicken.
  4. Bake the chicken thighs for 35 to 40 minutes, or until the internal temperature reaches 170°F. For extra crispy skin, you can turn on the top broiler for the last 2 to 3 minutes. Let the chicken rest for 5 minutes before serving.
