  • 14.5 ounces chicken broth canned

  • 2 tablespoons canola oil

  • 6 cups potatoes thinly sliced and peeled
  • 1 onion medium, sliced
  • Paprika and minced fresh parsley optional, for topping

Method
 

  1. Melt the butter in a small saucepan. Stir in the flour, salt, and pepper until the mixture is smooth.
  2. Add the chicken broth to the saucepan. Bring the mixture to a boil, then cook and stir for 1 minute, or until the sauce thickens. Remove the sauce from the heat and set it aside.
  3. Brown the pork chops on both sides in canola oil in a large skillet. Sprinkle the chops with additional salt and pepper if you wish.
  4. Grease a 13x9-inch baking dish. Layer the sliced potatoes and onion in the dish. Pour the broth mixture evenly over the layers.
  5. Place the browned pork chops on top of the potato and onion layers.
  6. Cover the dish and bake at 350 degrees for 1 hour. Uncover the dish and bake for 30 minutes more, or until the meat and potatoes are tender. Sprinkle with paprika and parsley before serving, if desired.
