- Melt the butter in a small saucepan. Stir in the flour, salt, and pepper until the mixture is smooth.
- Add the chicken broth to the saucepan. Bring the mixture to a boil, then cook and stir for 1 minute, or until the sauce thickens. Remove the sauce from the heat and set it aside.
- Brown the pork chops on both sides in canola oil in a large skillet. Sprinkle the chops with additional salt and pepper if you wish.
- Grease a 13x9-inch baking dish. Layer the sliced potatoes and onion in the dish. Pour the broth mixture evenly over the layers.
- Place the browned pork chops on top of the potato and onion layers.
- Cover the dish and bake at 350 degrees for 1 hour. Uncover the dish and bake for 30 minutes more, or until the meat and potatoes are tender. Sprinkle with paprika and parsley before serving, if desired.
