- Preheat your oven to 350 degrees Fahrenheit. Grease a 12-cup muffin tin.
- In a large skillet, cook the sausage over medium heat until it is no longer pink. Break the sausage into crumbles as it cooks, then drain off any excess fat.
- In a large bowl, beat the eggs. Add the onion, green pepper, salt, garlic powder, and pepper to the eggs. Stir these ingredients together.
- Stir the cooked sausage and the shredded cheese into the egg mixture.
- Spoon the mixture by 1/3 cupfuls into the prepared muffin cups.
- Bake the egg muffins until a knife inserted into the center of one comes out clean. This usually takes 20 to 25 minutes.
