Method
 

  1. Place bread on a work surface and spread mayonnaise evenly on one side of each bread slice.
  2. Toss cheese and pickles together in a bowl until evenly combined. Divide cheese mixture evenly among 4 bread slices. Place remaining 4 bread slices, mayo side down, on top of the cheese and pickle mixture.
  3. Spread half of the softened butter evenly over the tops of the assembled sandwiches.
  4. Heat a large skillet over medium heat.
  5. Place sandwiches, buttered side down, in the skillet. Spread the remaining butter evenly over the tops of the sandwiches.
  6. Cook until golden brown and toasted on the bottom side, about 4 minutes. Flip and cook until cheese is melted through and bread is toasted on both sides, about 4 minutes more. Serve immediately.
