Method
- Use a sharp knife to cut small indents into the mozzarella balls. These will be where the olive "pupils" go.
- Finely chop the kalamata olives. Place a small amount of chopped olive into each indent on the mozzarella balls to create the "eyes."
- Cut the pepperoni stick into small pieces, about 3/4 inch long. Also, cut some thin slices or strips of pepperoni, about 1/4 to 1/2 inch thick.
- Slice the red bell pepper into small wedge-shaped pieces for decoration.
- Begin assembling the skewers. Thread a piece of red bell pepper, followed by a chunk of pepperoni, and then a mozzarella ball with its olive "eye." Add a thicker slice of pepperoni. For the base, place a few thin slices of pepperoni, followed by another mozzarella ball to help stabilize the skewer.
- Refrigerate the assembled skewers for about 15 minutes before serving them on a Halloween-themed platter.
Notes
These bites are naturally gluten-free and can be a hit with kids and adults alike. For a spicier kick, you can add dried chili peppers as part of the decoration.
