Prep Time 20 minutes
Chilling Time 15 minutes
Total Time 35 minutes
Servings: 12 bites
Course: Appetizer, Snack
Cuisine: Italian-inspired

Ingredients

For the "Eyeballs"
  • 1 cup Mozzarella balls small
  • 2 tablespoons Kalamata olives finely chopped
For Assembly
  • 4 ounces Pepperoni stick cut into small pieces and thin slices
  • 1 Red bell pepper for decoration, sliced into small wedges

Equipment

  • Sharp knife
  • Skewers
  • Serving platter

Method

  1. Use a sharp knife to cut small indents into the mozzarella balls. These will be where the olive "pupils" go.
  2. Finely chop the kalamata olives. Place a small amount of chopped olive into each indent on the mozzarella balls to create the "eyes."
  3. Cut the pepperoni stick into small pieces, about 3/4 inch long. Also, cut some thin slices or strips of pepperoni, about 1/4 to 1/2 inch thick.
  4. Slice the red bell pepper into small wedge-shaped pieces for decoration.
  5. Begin assembling the skewers. Thread a piece of red bell pepper, followed by a chunk of pepperoni, and then a mozzarella ball with its olive "eye." Add a thicker slice of pepperoni. For the base, place a few thin slices of pepperoni, followed by another mozzarella ball to help stabilize the skewer.
  6. Refrigerate the assembled skewers for about 15 minutes before serving them on a Halloween-themed platter.

Notes

These bites are naturally gluten-free and can be a hit with kids and adults alike. For a spicier kick, you can add dried chili peppers as part of the decoration.
