- Place the lime juice, white vinegar, chili powder, cumin, salt, pepper, cubed pineapple, red onion, and chipotle peppers into a blender. Puree these ingredients until smooth.
- Pour the beer into the blender mixture and stir to combine.
- Put the cubed pork into a 5- or 6-quart slow cooker. Pour the pineapple mixture over the pork.
- Cook the pork mixture on low setting, covered, for 6 to 8 hours, or until the pork is very tender.
- Stir the mixture in the slow cooker to break up the pork pieces.
- In a separate bowl, stir the chopped cilantro into the mango salsa.
- Serve the pork mixture in warmed corn tortillas. Top with the cilantro-salsa mixture and any desired optional toppings.
