Ingredients
  

For the Pork
  • 2 tablespoons lime juice
  • 2 tablespoons white vinegar
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 3 cups fresh pineapple, cubed
  • 1 small red onion, coarsely chopped
  • 2 chipotle peppers in adobo sauce
  • 12 ounces dark Mexican beer bottle
  • 3 pounds pork tenderloin, cut into 1-inch cubes
For Serving
  • 1/4 cup chopped fresh cilantro For salsa
  • 16 ounces mango salsa jar
  • 24 corn tortillas (6 inches), warmed
  • 1 cubed fresh pineapple Optional topping
  • 1 chopped avocado Optional topping
  • 1 queso fresco Optional topping

Equipment

  • Slow cooker (5- or 6-qt.)

Method
 

  1. Place the lime juice, white vinegar, chili powder, cumin, salt, pepper, cubed pineapple, red onion, and chipotle peppers into a blender. Puree these ingredients until smooth.
  2. Pour the beer into the blender mixture and stir to combine.
  3. Put the cubed pork into a 5- or 6-quart slow cooker. Pour the pineapple mixture over the pork.
  4. Cook the pork mixture on low setting, covered, for 6 to 8 hours, or until the pork is very tender.
  5. Stir the mixture in the slow cooker to break up the pork pieces.
  6. In a separate bowl, stir the chopped cilantro into the mango salsa.
  7. Serve the pork mixture in warmed corn tortillas. Top with the cilantro-salsa mixture and any desired optional toppings.
