Ingredients
  

Salmon
  • 2 salmon fillets, skin on
  • 1 fine sea salt to season
  • 1 olive oil for brushing
Chilli Mayo Topping
  • 2 tbsp mayo
  • 2 tsp sweet chilli sauce
For Serving
  • 4 lemon quarters

  • Shallow roasting tin
  • Small bowl

Method
 

  1. Rinse the salmon fillets and pat them dry. Season all over generously with sea salt.
  2. Preheat the grill to medium heat (250C).
  3. Brush the fillets with olive oil on all sides. Place them skin side up in a shallow roasting tin.
  4. When the grill is hot, place the tray underneath it and grill for 5 minutes. Turn the salmon over and grill on the other side for 5 minutes again.
  5. Stir the sweet chilli sauce with mayo in a small bowl while the salmon cooks.
  6. Serve the salmon with the chilli mayo and lemon quarters.
